The Embassy of Italy held yesterday a gala lunch at the IES Hotel Escuela de la Comunidad de Madrid to commemorate the Week of Italian Cuisine in the World, in its tenth edition.
This event, organized annually, is entirely dedicated to the promotion and appreciation of Italian culinary tradition. In Spain, the initiative is supported by the main Italian institutions and associations coordinated by the Italian Embassy in Madrid.
Last Wednesday, at the IES Hotel Escuela de la Comunidad de Madrid, renowned Italian chef Marcello Spadone gave a master class addressed to the students of the center, an occasion to meet and learn, a training day designed to transmit the values, techniques, creativity and products that characterise Italian cuisine to the young chefs of the future.
The experience, which combines teaching and practice, culminated in the preparation of this gala lunch held yesterday, prepared by the chef and his team together with the students, a moment of exchange that highlights the richness and capacity for innovation of Italian gastronomic tradition. The project was born as a training workshop in which students from IES Hotel Escuela de Madrid took part in a cultural dialogue between Italy and Spain, specifically within the framework of the semester devoted to the Abruzzo region and also thanks to the collaboration of Casa Abruzzo.
Under the direction of Abruzzese chef Spadone, students have had the opportunity to explore techniques, products and culinary traditions of the four provinces of Abruzzo, establishing links with Iberian gastronomy.
The Italian Embassy expressed its sincere thanks to Miguel Ángel Pérez, director of IS Hotel Escuela de Madrid, for his support and collaboration, as well as the dedication of the teaching team whose involvement made it possible to develop this valuable training experience and encounter between cultures. The menu that diners were able to taste paid tribute to the gastronomic richness of Abruzzo, land of deep traditions and authentic flavors.
Each dish proposed a dialogue between memory and innovation, between the rural essence and contemporary creativity, celebrating local products and the excellence of Italian cuisine, an experience that invites you to discover how the table can become a bridge between cultures, shared emotions and knowledge.
Marcello Spadone, chef and owner of the restaurant La Bandiera in Civitella Casanova, awarded a Michelin star, is one of the most outstanding figures of contemporary Abruzzese cuisine. Trained in L’Alberetta under the direction of master Gialtiero Marchesi, where he perfected his technique, rigor and aesthetic sensitivity, acquiring a deep knowledge of raw materials and the balance of flavors.
Back home, he revitalized the family restaurant with his wife, Bruna Sablone, transforming it into a reference of regional and national gastronomy. Its cuisine combines the peasant tradition with contemporary research, highlighting local products and small-scale craftsmen of taste, with dishes that tell the story of the territory from an elegant and authentic perspective.
